Elder Galloway's week in Ambato
This Week in Ambato
Well, this week has been a bit difficult, but I´m happy to say that Elder Lopez and I are together again. He and Elder Schneider came from Quito on Wednesday. Elder Schneider had two infections: one in his stomach, and one in his intestines... I´m sure that wasn´t fun. He was on a liquid diet for a whooooole week, with a bunch of tubes and things connected to him. But he´s better now, even though a lot thinner. Elder Lopez is well, too.
We´re trying to work, and are pleased to announce:
Baptism of the Week (this Saturday):
Well, Gloria is very happy with the things we´ve taught her. Even though she didn´t attend church a week (her brother was in a car crash in Quito and she had to go there; he was in a coma for a few days, but now is recovering, and can recognize his family now -- blessings), she came this last Sunday and felt very happy in the ward, where she was very well received. She and her 12-year-old son, Alexander, are going to get baptized. Cesar... didn´t attend church becuase he went to a party Saturday night with his friends, and, even though was strong and didn´t do anything bad (we sent him periodic texts reminding him), he came home a little more surly. 16-year-olds are delicate things. But he came to the movie night last night and still wants to get baptized. He´ll just have to show it by coming to church next week.
Gloria came to a baptism of another ward in the zone. We went together, explained some things, and she enjoyed it thoroughly. It´s so interesting that, certainly, in the "ordinances of the Gospel is the power of God manifest" (somewhere in the Doctrine & Covenants). Even though we didn´t feel anything particularly powerful in the baptism itself, when the brother who got baptized gave his testimony of what he experienced afterwards, we enjoyed a powerful manifestation of the Spirit. I asked Gloria if she felt it too, and she said she did. It was something she had never felt before; I explained that it was the Holy Ghost, that testifies of the truthfulness of what we witnessed. How glorious it is to know that this is the true Church. As Joseph Smith said, the presence of the Holy Ghost is the most important thing this Church has, and is evidence that it is of God. No other organization in the earth has that witness that these things are not of man nor of men, but of God.

Stake Video Night Turnout of the Week:
Last week the seven people who came to the new Sunday night stake "tradition" saw the life and times of Joseph Smith. This week, a lot more people came to the activity (see photos), including Gloria, Cesar, and Alexander. We were happy. Until there were technical difficulties. I wanted to see Legacy, but my copy of the Doctrine and Covenants seminary videos was... scratched. So one of the young women in my ward lent the disc of The Errand of Angels. And, even though it was in English (and Germans) with Spanish subtitles, we all enjoyed it. Even though sister missionaries have another "ideal" of "the mission," and even though it was "romanticized" quite a bit (who wouldn´t want to serve a mission if you went to all the upscale sectors of Austria?), it had a lot of truth, and is quite more emotionally correct than, say, The Best Two Years. I would recommend it as a great movie for anyone.
Movie Posters that Caught my Eye of the Week:
Here in Ecuador little shops-on-the-corner-that-sell-pirated-videos abound. You can buy a collection of at least three movies for... a dollar. I would say that it´s almost imposible to buy original videos. At least I´ve never seen any -- even of the mormon-themed videos they sell near the temple!. Anyway, so, it´s interesting to see what movies have come out recently. And I just wanted to say that the two recent biopics look very interesting. The Iron Lady about Margaret Thatcher, and the one about Abraham Lincoln by Steven Spielberg. I would like to see them when I get home.
That´s basically all. We´re working. This weekend there are changes, and I know that one of us will be leaving Ambato. I hope it´s not me, and not just because the famous Celebration of Fruits and Flowers is in February (I hear glowing remarks about everything). I´ve grown attatched to the people here, and I feel that I can do a lot of good to help them be more, as you say, "missionary-minded" and tighter. We´ll see what happens. Whatever happens, I´m happy to have served here.
This Church really IS true. If you don´t know, find out for yourself. It´s the only way to live life.

Ward Conference
For combined priesthood and Relief Society meeting we discussed the talks we had in sacrament meeting about what we can do as individuals. The points were made that we should bring people instead of sending. We need to invite people and that first invitation. brother Bahr said we need to live the gospel so others can see how happy we are so the gospel is appealing to others. The point was made by Brother Harker that with our new combined ward we have the opportunity to make new friends and share the blessings of the gospel. Sister Ferguson told of how she went to Scotland and was able to share a little bit of the gospel with store clerks and her own family. Brother Aaron Campbell told of the many friends he has here in Utah who are not LDS coming here for work. We need to befriend them and make them feel welcome so we can show them how appealing our lives in the Church are. Brother Les Campbell told about his interest lighthouses and how Christ is the lighthouse. We need to be lighthouses to others. It gives the Holy Ghost the opportunity to touch their lives even for a brief moment. Sister Cantrell thinks that genealogy and family history is one of the best missionary tools. She told of her father who was antagonistic until he got involved in genealogy and was touched by the spirit of Elijah. her daughter told of how she inserts references to the Church in her classes at Jesuit University. Sister Bahr works with many people in her real estate business and she always asks the to pray about finding the right home for them no matter what religion they are.

Relief Society Service Auction
Tuesday, January 15 at 7:00 p.m. our Relief Society will hold a service auction. Come prepared to donate a service that will be auctioned off. You will be given points to use to purchase the auction items. Additionally, you may earn points by bringing canned food that will be donated to the Food Bank. Each food item will be worth one point. This will be an exciting evening of fun! Light refreshments will be served.

Relief Society Lesson for Jan.
The lesson for Relief Society was the introduction to Teachings of the Presidents of the Church: Lorenzo Snow which we will be studying on the 2nd and 3rd weeks in RS. We talked about a few different gospel topics that Pres. Snow exemplified. We spent most of the time talking about how Pres. Snow used the process of pickling cucumbers to symbolize the process of conversion. We shared our own conversion stories and read how Pres. Snow joined the Church and became converted to the gospel. We also talked about the revelation he received on tithing and how he was a wonderful example of accepting and acting on the Lord's will.
Opportunity to Host Foreign Students
Every winter and summer my sister and brother-in-law have students from either China, Taiwan, or other countries come to Utah for an exchange program where they come to learn about American culture and practice their English. This year students from China are coming at the end of January. There are still about 8 students that need to be placed with host families that can drop off and pick up their student(s) at Mt. View for one week and since we live so close to Mt. View I told my sister I would see if I could find a family or two that would be willing to host a couple students. I don't know many people in the ward well enough to know if they would be interested and so I was wondering if there is a way that I can let all the sisters in the ward know about it or if you know any families in particular that I could contact. I feel like there is at least one family in our ward that would be interested but I just don't know how to find them. My sister is hoping to find families within the next couple of days so if you could let me know that would be great. And if you don't know of anybody then don't worry about it I just thought I would ask. Here is some additional information that my sister sent me about the program just in case you need it. I have a lot more specific information about it that I can give to people that are serious about hosting some students. Anyway thank you for even reading this e-mail.
"Hosting really is a great experience- especially for families who are looking for opportunities to share the gospel with someone who wouldn't otherwise have the opportunity to learn about the gospel. We sincerely believe the reason Heavenly Father is helping us bring more students to Utah is because right now it's the only way they can be exposed to the gospel and at least see for themselves that Christians and Mormons are good people. "
"The families would host from January 26 - February 2 (only 7 days). The family needs to be willing to drop off and pick up their student(s) at either OHS or Mt. View each week day. The students are gone during the day and with the family in the evenings and on weekends. Each family receives $60 compensation for food expenses per student hosted and $60 compensation for gas per household. The compensation isn't payment for hosting: it's just intended to ensure that host families don't incur any expenses out of their own pocket for hosting. Only two students can be with each family. We especially need families who are willing to drop-off and pick-up at Mt. View. "
- Drop off at either Orem High or Mt. View (we especially need families who are willing to drop off at Mt. View) at 9:00 a.m. on some days and before school (7:25 a.m.) some days. Pick-up at the same location at 4:00 or 5:00. Exact schedule will be given out to confirmed families. If they live within walking distance the students can just walk.
- Students are from China. They speak pretty good English and are well-educated, good kids. They are coming to improve their English and to experience American culture.
- Students will eat breakfast and dinner with their host families.
- Families are encouraged to hold family activities while the students are with them such as FHE, board/card games, movie party, or activities out of the home to get to know the area better.
- Ideally, each family would host 2 students.

Chicken and Rice Soup to Stop Coughs and Soothe the Throat
CHICKEN SOUP (good for you when you're sick)
Ingredients:
2-3 pieces of chicken (breast is best, with some thighs, but other pieces will do if there is some bone and skin)
2 medium onions chopped up (or 1 tablespoon dried diced onion or 1 tablespoon onion powder or more to taste)
2 teaspoon garlic powder (or one clove raw garlic)
1-2 bay leaves
½ teaspoon dill
½ teaspoon coriander
2 teaspoon salt (taste the soup before adding any more salt!)
dash of pepper (optional)
gluten free noodles or rice (optional: diced potatoes or vegetables)
Water—enough to fill the pot 2/3 full
Instructions:
1. Remove the skin from the chicken (takes off most fat). If you are making soup for someone with a cold, leave the skin on. The fat is soothing to the throat. Put into a pot with a lid with enough water to fill the pot 2/3 full. Using a pressure cooker makes the soup easier to make. You can use a crock pot and cook for 8 hours on low. Make sure the water covers the chicken. Use a pot that has at least 4 quart capacity. If you want more soup, add a couple of more pieces of chicken and use a larger pot.
2. Add chopped onion, garlic powder, bay leaves, coriander, dill, salt, and pepper to the water. Play with the amounts until it tastes good to you.
3. With the lid on, simmer the soup on medium low heat until the chicken is tender enough to come off the bones. Usually takes about an hour in a regular pot and 15-20 minutes in a pressure cooker. Check soup frequently! If the water boils away, add more. If scum forms on the top, remove it with a spoon every ten minutes or so.
4. When chicken is cooked, remove the chicken from the bones and put the meat back into the soup.
5. Add a few noodles or 2 cups raw rice or vegetables and cook with lid on until done. Beware! Rice will absorb lots of liquid and leave no soup, so make sure there is about 4 times as much liquid as rice.
6. While rise or pasta is cooking, add a dash or more of all the spices to make the flavor pop.
NOTE: This soup is good to put in freezer bags in individual portions and freeze for up to a month.
